Ingredients:

  • 6 large Yukon Gold potatoes
  • ¼ cup olive oil
  • 1 ½ teaspoons paprika
  • 1 ¼ teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon chili powder (adjust for desired spice level)
  • ¼ teaspoon black pepper
  • 1 teaspoon salt


Instructions:

  1. Preheat your oven to 450°F. Line a rimmed baking sheet with parchment paper to prevent sticking. Keep an eye on the potatoes during baking since this is a high-heat recipe.
  2. Peel and dice the potatoes, then place them in a large mixing bowl. Set aside.
  3. In a small bowl, combine the olive oil, paprika, garlic powder, onion powder, cumin, chili powder, black pepper, and salt. Stir well to blend.
  4. Pour the seasoned olive oil mixture over the diced potatoes, stirring to ensure every piece is well coated.
  5. Spread the potatoes in an even layer on the prepared baking sheet. Bake for 35-45 minutes, stirring every 10 minutes to ensure even roasting.
  6. The potatoes are ready when they’re crispy on the outside and tender on the inside. If desired, season with a little extra salt before serving.
